This recipe makes a versatile Malay-style curry powder that is super fragrant with a nice amount of heat, but you can easily adjust the amount of chillies to suit your preferred spice level.

Great for rich coconut curries, especially rendang and nyonya, making a satay sauce, or it can be used as a dry rub for meat and vegetables.


  • 20 whole cloves
  • 8 cardamom pods split
  • 12 whole black peppercorns
  • 8 white peppercorns
  • 2 cinnamon sticks
  • 2 whole star anise
  • 2 dried bay leaves
  • 6 whole dried red chillies
  • 4 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • 2 tsp fennel seeds
  • 2 tsp ground turmeric
  • ½ tsp fresh grated nutmeg
