Recipe: Sweet furikake
Furikake is a nutty, crunchy, umami-packed seasoning and, roughly translated from Japanese, means 'to sprinkle over'. While traditional seaweed-basked furikake is deeply savoury and amazing on a bowl of rice, this sweet furikake is perfect for desserts and outstanding on a bowl of ice cream.
This textural topping is delightfully sweet, nutty, salty, bright and slightly spicy, and can easily be customised to suit your taste! We've used nori salt flakes in this mixture for an element of umami but you could use plain flaky salt if you prefer. Want it less spicy? Leave out the chilli flakes and add a little more sugar.

- 3 tbsp white sesame seeds, toasted
- 3 tbsp candied iyokan (yuzu or orange peel would also work), finely chopped
- 1 tsp crushed chilli flakes
- 1 tsp nori salt flakes (or plain flaky salt)
- 1.5 tsp coconut sugar
