Dashi is an umami-rich, fish-based traditional Japanese stock that can be used as a soup base or a flavour-enhancing condiment. This organic white dashi is made with bonito, kelp, shiitake mushrooms, white soy sauce, mirin, vinegar, sugar, and contains no artificial colours, flavours, or preservatives. It has been reduced into a golden concentrate that can be mixed with water to make a flavourful broth for noodles, or added to dressings, sauces, and marinades. For a single serve of broth mix 20ml of dashi with 100ml of water. To preserve its clean and delicate flavour do not boil the dashi.
