Udon is a thick Japanese wheat noodle made from white wheat flour, salt, and water. Neutral in flavour, udon noodles have a pleasantly chewy but soft texture and can be served hot in a dashi-based soup, cold with a dipping sauce or stir fried to make yaki udon.
