An extra long (52cm) wheat pasta that harkens back to the early days of handmade pasta manufacturing, before modern machinery simplified cutting the pasta into smaller lengths. Purchased as it was, air-dried in the factory, in long strands looped over itself, the home cook would break it to fit into the pot of boiling water.
This wheat bigoli, a traditional Venetian thick spaghetti, takes its name from the ancient press used in its manufacture. The pasta's unique texture encourages sauce to cling to it for a perfect bite every time.
