Papanui is a property near Merriwa in the Upper Hunter Valley, where chooks are free to roam, following cattle in a planned grazing system, moving every few days to fresh pasture.
They are protected by Maremma dogs from foxes, eagles and other prey. Papanui Open Range Eggs are regular winners in the Delicious Magazine produce awards.
Hunter Valley Verjuice is made from unripened semillon grapes grown in the Hunter region. It adds acidity to cooking in place of vinegar or wine, but it is not as strong as other acidulates so there is less chance of it masking flavours. Use in sauces, dressings and as a condiment.

Nestled between Wollemi and Yengo National Park, Chris and Louise of Wallaroo Olives hand-pick, process and jar the olives at their grove under the watchful eyes of the resident wallabies and kangaroos. Chris and Louise planted their grove in 2005 and produce the highest quality of Kalamata, Azapa and Frantoio table olives.
