Wellington Apiary produces honey that reflects the native flora of Hobart, Tasmania. The honey is not heated at any stage of extraction and is coarse filtered, allowing all the pollen, flavours and aromas to be retained – resulting in pure raw honey, just as the bees made it.
Small batches of rare honey varieties are harvested seasonally, making them very special and limited in numbers. This wild fennel honey has a lovely caramel flavour with a refreshing aftertaste. Serve with a scoop of vanilla bean ice cream, spread on a liberally buttered crumpet, or drizzle on a goat cheese and pear tartine.
