Made in the Northern Isles of Scotland using traditional methods and Orcadian ingredients, Orkney Craft Vinegars are raw, unpasteurised, unfiltered, and bottled with the mother. Aged in oak barrels for up to a year, these unique vinegars are softer than most mass-produced vinegars but are still flavourful and can be used in a variety of different dishes.
Sustainably harvested dulse seaweed is made into wine, fermented, and infused with applewood smoked dulse to make this umami-rich vinegar. Smoky and meaty in flavour, this vinegar can be added to dashi-based soups, drizzled on grilled fish and octopus, or mixed with soy sauce to dip dumplings and Hainanese chicken.
