This sticky short grain rice is perfect for sushi making and rice pudding. To make Sushi Meshi (seasoned sushi rice) combine rice wine vinegar, sugar & salt and fold through cooked, still hot, sushi rice (ideally fanning to cool at the same time) until the rice becomes glossy and body temperature. Cover the rice with a damp tea towel until ready to use, as sushi rice will become hard when refrigerated.
