A common ingredient used in South-East Asian cooking, particularly in Malaysia and Indonesia, dark palm sugar (also known as jaggery or gula melaka) has a distinctive fragrance and a deeper, toasty flavour in comparison to the more common light-coloured palm sugar. Being less sweet than cane sugar means that it can be used in savoury dishes as well as desserts. Shave or chop carefully with a knife to incorporate into your dish and store any remaining sugar in an airtight container.
