Masa harina, or corn flour, is made from dried corn kernels that have been cooked and soaked in limewater, then ground to a fine flour. The white variety is most popular in Mexican cooking, with a slightly sweeter flavour than yellow, and is used to make tortillas, pupusas, tamales and gorditas. It can also be used to bread chicken and fish before frying, thicken soups and chili or to make cornbread or the Mexican drink atole. This product is gluten free.
