Udon is a thick Japanese wheat noodle made from white wheat flour, salt, and water. Neutral in flavour, udon noodles have a pleasantly chewy but soft texture and can be served hot in a dashi-based soup, cold with a dipping sauce or stir fried to make yaki udon. Cook these noodles in well-salted boiling water for 10-12 mins until tender, drain and then rinse with cold water to retain the bouncy texture and remove some of the surface starch.
