Koji is rice that has been steamed and inoculated with a fungus called Aspergillus Oryzae. It is an enzyme-rich ingredient used to make miso, sake, soy sauce, mirin, shio-koji and many other fermented foods. This dry koji is made in small batches with cultured bio-dynamic Australian rice.
