Barley miso, also known as mugi miso, is popular throughout the Kyushu region of Japan and has a deeper flavour and sweet, malty aroma. This Australian-made miso paste is produced in small batches by hand using traditional Japanese techniques and contains no artificial additives. Australian bio-dynamic soybeans, organic pearl barley, koji and salt are combined and slowly fermented to create a flavourful paste that can be used to make soup, marinades, and dressings. Stir a spoonful through stews, braises, even risotto and polenta to boost the umami flavour!
