Inspired by a classic Japanese pickled fruit called umeboshi (salted plum) these anzuboshi (salted apricots) are mouth-puckeringly tart and briny. Fresh apricots are salted, sun-dried and preserved for several months to create a unique style of pickle that can be used as a vegan-friendly ingredient that adds seasoning and complexity to a dish. Anzuboshi is most commonly eaten with steamed rice but the fruit can also be sliced, chopped or mashed and added to dressings, sauces, marinades.
