Organic barley has been steamed and inoculated with a fungus called Aspergillus Oryzae. Much like traditional koji, which is made with rice, it is an enzyme-rich ingredient used to make miso, soy sauce and shio koji. This dry barley koji is made in small batches with cultured bio-dynamic Australian pearled barley.
