These large, elongated calms are sustainably caught, hand shucked and packed in a salt brine to preserve their fresh, oceanic flavour. Lightly grill or sauté to warm through and dress with olive oil, garlic and lemon, chop and add to pasta with fresh herbs, or crumb then deep fry and serve with a fresh gremolata.
