The very first pressing of our 2022 harvest extra virgin olive oil. This Australian, limited production, unfiltered oil has a cloudy appearance and a vibrant colour that is typical of early-picked olives. Its characteristics are unique to this season – a fresh herbaceous aroma and a robust but well-balanced flavour that begins fruity and finishes with peppery, rocket leaf notes. Best used within the next 2-3 months, this oil is perfect for adding a bold finishing touch to dishes like steak tartare, beef carpaccio, pasta e fagiole and hearty vegetable soups. It would also be lovely drizzled over fresh burrata with briny capers or grilled swordfish.
