The New Vegan Table

Presented by Paul Niddrie
About the class
We’ve all seen it…the poor vegetables baked and stuffed with rice and all manner of spice, nut ‘roasts’ and so, so many potatoes. Recipes that belong back in the 70s. These are the attempts at vegan dinners that make us all cringe a little.
From the mind of your chef – “This is a class for FLAVOUR. I am a chef – I cook for maximum flavour. Whilst yes, vegan food is inherently healthier don’t view this as the only draw card to vegan food.

This class is about tasty living, not clean living. Tasty food with a lower impact on the world we live in. Let’s cook flavour-forward food without being destructive to the planet. This is a meat-eating chef’s guide to vegan food. A ‘how-to’ on NOT serving your vegan guests just side dishes of vegetables”.

If that doesn’t convince you, we don’t know what will.

Just looking for a greener way to cook on the daily? This is a great starting point. Chef Paul Niddrie is in the hot seat, and he’s using his considerable food knowledge to deliver the goods from some unexpected places – no dull dishes here!

Your Menu…

  • Seaweed and lime crusted bullhorn pepper schnitzel with celeriac and green mojo soy mayo
  • Glazed Hasselback beetroots with harissa roasted white beans and sweet and sour black lime sauce.
  • Imam Bayildi – a luscious spiced eggplant and tomato dish simmered in olive oil
  • Silky hummus with ras-el-hanout laced black beans, fresh herbs and flatbreads
  • Old school chocolate lava cake with coconut and miso butterscotch sauce
