The Art of the Tart
He made a name for himself as a dessert wunderkind in last year’s MasterChef, and is currently cheffing at Surfhouse Restaurant by Lesley Taylor in Merewether.
There is no denying Reece Hignell’s passion and flair for the sweeter things in life, and in this fabulous Pastry class you will get to experience it first hand – and master the skills to create your own sweet and savoury treats at home.
Across 3 1/2 hours you will make a 32cm savoury shortcrust pastry shell and turn it into a quiche of your own design. You will also make one baked lemon mini-tartlette with sweet shortcrust pastry, and a chocolate shortcrust choc-hazelnut mini-tartlette.
The pastry elements are hands-on, as well as your quiche filling, with Reece providing a step by step guide to the sweet fillings in a full interactive-demonstration.
At the close of the class you will enjoy a slice of Reece’s Quiche, side salad and a glass of bubbles and will take home your own quiche (32cm tart tin included!) and your 2 sweet tartlettes, having Mastered the Art of The Tart!

- Wear closed toe shoes (we love your toes where they are),
- Pull long hair back off your face (“waiter, there’s a hair in my soup”),

- There are often leftovers at the end of each class so we ask that you bring Tupperware from home to put them in, as we will no longer be handing out plastic containers in our bid to save the environment.
