About the class


Join head chef Mitchell Beswick (Muse Restaurant) and his sous chef Jake Paterson for this decadent, creative and cutting edge class.

This will be an evening of elegance as these two top chefs lift the veil and show you how it’s done in one of the country’s finest restaurants.

Muse Restaurant (Hungerford Hill Winery, Pokolbin) offers a complete, contemporary dining experience and adheres to a consistent culinary approach across the board: technique, restraint and respect.

Their restaurant menus are seasonal and as is this class, with canapes and five small courses – all with matching beverages no less!

With an emphasis on flavour balance, course placement, produce and product as well as when and why certain techniques are employed, this class –  is in a class of its own.


Course 1
Raw fish, Morpeth cucumbers, blood orange kosho, shiso, scampi roe

Course 2
Local sweet corn, Clarence River school prawns, nasturtium, wakame, puffed koshihikari rice

Course 3
Wood-fired and steamed Morpeth eggplant, ginger, miso, Binnorie goat’s curd, wild rice

Course 4
Little Hill Farm Joyce’s Gold Heritage chicken, Morpeth butternut pumpkin, thyme

Course 5
Frozen coconut, strawberry, violet, meringue
