Intro to Smoking
If you got ’em – smoke ’em! Intro to Smoking with Harry Callinan aka Mulga Bill will give you all the tools to get your bbq game on point.
Are you dreaming of juicy, peppery brisket, pull apart pork shoulders or wobbling beef ribs but just can’t get your smoker to do what you want? Welcome to Intro to Smoking , where Chef Harry Callinan aka ‘Mulga Bill‘ will show you the ins and outs of all things smoking.
From smoker types, fuels and methods, to meat selection and trimming, regional BBQ styles and rub composition, pairing sauces, heat management, temps and times, signs of doneness and a good ‘cook’ and intuitive cooking. You’ll be able to ask questions and have them answered by our smoking guru Harry.
We will then get you doing some hands-on rub creation and sauce making that you’ll bottle and take home to use on your next smoke-out.
We will finish the night with a frosty beer and succulent loaded bbq plate (recipes included!).

- Wear closed toe shoes (we love your toes where they are),
- Pull long hair back off your face (“waiter, there’s a hair in my soup”),
- Inform us of any dietary requirements prior to purchasing your ticket/s. Please also be aware that some requirements and/or allergies cannot be catered to – depending on the class.
- There are often leftovers at the end of each class so we ask that you bring Tupperware from home to put them in, as we will no longer be handing out plastic containers in our bid to save the environment.
