You’re at the butcher shop and staring longingly at a whole duck but are too afraid to take the plunge. Maybe you’ve walked through Chinatown and seen rows of perfectly roasted Peking duck lining a window while you dreamed of making one yourself. Come and let us demystify duck for you! Join us for a 4-hour Duck Banquet Masterclass with Chef Paul Niddrie (Flotilla, Muse Kitchen) and revel in the glories of using the whole bird.

Paul will guide you through four dishes, each using different parts of the duck in a clever East-meets-West style. You’ll experience breaking down a whole duck, sausage-making, confiting, parfait production and roasting a whole crown of duck along with flavour balancing and the power of building a flavour pantry.

  • Wear closed toe shoes (we love your toes where they are),
  • Pull long hair back off your face (“waiter, there’s a hair in my soup”),
  • Inform us of any dietary requirements prior to purchasing your ticket/s. Please also be aware that some requirements and/or allergies cannot be catered to – depending on the class.
  • There are often leftovers at the end of each class so we ask that you bring Tupperware from home to put them in, as we will no longer be handing out plastic containers in our bid to save the environment.
