Break down, debone and create something out of EVERY PART OF A CHICKEN with Richard Ransom (Crown Plaza, TAFE, Core Espresso).

The chicken bones will be turned into a flavourful stock, which will be converted into an Chinese Chicken and Sweet Corn Soup. You will make American-style Buffalo Wings; Chicken Ballotine with the thighs and legs, and pork scratchings get a run for their money as we a make Chicken Crackle with the skin. Finally, round out your cool weather comfort food menu with an earthy and unctuous Chicken Tagine. What a menu!
