Imagine yourself sitting near the docks in the port city of Marseille, the sun glittering on the water as champagne sparkles in your glass. White tablecloths, a light breeze and then the magic happens – you’re presented with a glorious Bouillabaisse, the famous French Seafood Stew.

The aroma wafts from a rich red broth, tinged with golden saffron and teeming with seafood pulled from the waters beside you. Crowned with the most glorious Rouille (a silken mayonnaise with a secret ingredient). Baguettes torn apart and slathered with cultured butter round out your meal along with a crisp, rich glass of white wine.

A bubbling cauldron of Mediterranean magic awaits you in our Bouillabaisse (Provencal Seafood Stew) Masterclass with chef Paul Niddrie.

In this class, you’ll learn all of Paul’s secrets to creating the best bouillabaisse broth. Paul will teach you all about crushing and marinating shellfish to form the base of your Bouillabaisse. He’ll teach you to perfectly cook each type of seafood; make a luscious Rouille and even culture your own butter. This is a labour of love – one that rewards you with a show-stopping dinner party dish that will have your guests dreaming of a little bistro in a seaside town…

  • Pull long hair back off your face (“waiter, there’s a hair in my soup”),

  • There are often leftovers at the end of each class so we ask that you bring Tupperware from home to put them in.
