The food of South Korea is explosively flavourful, combining fermented, preserved and pickled flavours with fiery bursts of chilli, artful use of vegetables and, of course, those barbecued flavours synonymous with Korean cuisine.

Daesang Gochujang
A thick, vibrantly red paste made with chilli, glutinous rice and fermented soybeans, gochujang adds a salty, slightly sweet character to bulgogi, hotpots, soups and dipping sauces.

Daesang Ssamjang
David Chang refers to ssamjang as a love child of two Korean sauces – daenjang (Korean miso) and gochujang. Literally translated to ‘wrapping sauce’, ssamjang is traditionally served with crispy pork belly, grilled skirt steak or other fatty meats, wrapped in a leaf of lettuce. Its salty sweetness and distinct fermented character give a hit of umami to any dish it’s added to.

Daesang Roasted Sesame Oil
This toasted sesame oil is widely used in Korean cooking: side dishes, rice dishes, Korean BBQ and in dipping sauces. It adds a nutty aroma and savoury flavour and is used as a finishing oil in bibimbap as well as in namul and other ‘banchan’ side dishes.

The Essential Ingredient Gochugaru Korean Chilli Flakes
A key part of the Korean pantry, this coarsely-ground red pepper has a smoky and sweet flavour, and provides the spiciness in popular Korean dishes like tteokbokki (stir-fried rice cakes). It’s an essential ingredient in kimchi, whether you’re making a quick cucumber version or preparing cabbage for months of fermentation.

Dongwon Roasted Seaweed with Sesame Oil
Made by shredding, drying, roasting and seasoning seaweed, these crisp and flavourful sheets can be enjoyed as a snack, or served with steamed rice, used to make a hand roll or crumbled for a soup or salad topping. Serve alongside a gochujang-spiked Korean beef tartare as a simple, delicious starter.

Daesang Sweet Potato Noodles
Sweet potato noodles, also known as glass noodles or dangmyeon in Korean, are made from sweet potato starch and contain no fat, sugar or gluten. The noodles turn transparent when cooked, retaining a delightfully slippery, chewy texture. These noodles can be enjoyed hot or cold in stir-fries, hotpots, soups or salads. Simply boil in a large pot of water for 4-5 mins, drain and rinse under cold water.
