Recipe: Oysters with pickled sea lettuce

Freshly shucked oysters are an irrefutable pleasure, and while they’re delicious as they are, a leaf of pickled sea lettuce adds both vibrant acidity, and a boost to the already inviting ocean flavour.

Serves 12 oysters
12 freshly shucked oysters
45g The Essential Ingredient Sea Lettuce View
3/4 cup white wine vinegar View
3/4 cup water
1 tbsp salt View
1 tbsp white sugar
1 garlic glove
1 tsp mustard seeds View

Combine the vinegar, water, garlic clove, mustard seeds, salt and sugar in a saucepan. Simmer over medium heat until sugar and salt are completely dissolved.

Allow pickling liquid to cool completely, then add dried sea lettuce.

Soak sea lettuce for 2 hours, then place a small crumpled leaf onto each oyster. Serve.
