Homemade mayonnaise is fabulous, but quality store bought mayonnaise certainly has a place in most kitchens. You can personalize it and whip up some delicious mayonnaise based sauces to go with your fresh prawns or summer seafood.
Pick up a kilo or two of prawns, some crusty bread, a bottle of white wine, and a big jar of top quality mayonnaise. You can easily make these impressive sauces using a few cupboard and fridge essentials. You’re only limited by imagination and…well the contents of your fridge!
Mix your mayonnaise to taste to create these popular dressings.
Roast garlic, peel and crush it. Push it through a sieve to get a smooth consistency and season to taste. Black garlic would also work well.
Thousand Island Dressing
Add top quality tomato ketchup or sauce, a squeeze of lemon juice, a splash of tabasco and salt and pepper.
Chop some whole tinned chipotles, and blend. Remember they’re hot!
East West dip
Mix white miso and Greek yoghurt in equal parts. Top with black sesame seeds.
Add a splash of Riesling vinegar, a squeeze of lemon, salt and pepper. This is a fantastic addition to a Kale-slaw.
