Serendipity began almost by accident in 1966 in a Paddington kitchen, when Alix Mandelson was not satisfied that the most exotic ice cream available was Neapolitan. Being allergic to chocolate, it left her with the pink stripe and the white stripe – neither of which contained the real ingredients she was craving. So she set to work creating her own ice cream from fresh cream and eggs. Twenty years later, her daughter Sarah took over the business, and now, after 50 years, Serendipity has grown to be Australia’s most awarded ice cream, winning well over 400 medals and 26 trophies.
Gelista is a unique artisan style, handmade gelato which is produced in small batches, using batch freezing technology ensuring a consistently creamy texture. Gelista’s milk and fruit base range, developed in conjunction with some of Australia’s leading chefs is a true celebration of ice-cream flavours.
Established in 2009, the Gelista brand is rapidly gaining recognition as the leading brand of luxury gelato in Australia. The artisan style, handmade gelato is produced in small batches, using batch freezing technology to ensure the creamiest texture and that the purest fruit flavours shine through.
Gelista is well known for taking great care in selecting the best ingredient they can identify. Their mantra is to find ingredients with “Terroir” – a sense of place and provenance that translates into a quality that is distinctive and discernible to taste.
“A lot of work goes into flavour development”, says Peter Cox, managing director of Gelista. “We track trends in London, Milan and New York as we research a development slate. This gives us insights that allow us to match flavours based on the best of what’s locally available or anticipate emerging trends putting us ahead of the game. Then we have internal taste panels evaluate a large number of new flavour formulations. It is only the very best formulations that end up with the Gelista name on them!”
