Mushroom Oil: Creating your own secret ingredient

Bottle of OilThe Essential Ingredient’s range of dried mushrooms are perfect for many dishes; sauces, risottos, stuffing, pickles, omelettes, stews, or anywhere fresh mushrooms are used.

They’re also perfect for creating your own secret ingredient: Mushroom oil.

Simply choose your favourite dried mushroom variety- the Essential Ingredient’s core range includes porcini, morel, shiitake, chanterelles and boletes- or a combination thereof.

Add 20g of dried mushrooms to 500ml of light-flavoured olive oil or sunflower oil. Combine over a low heat and until oil changes colour slightly. The oil should have inherited the aromatics of the mushrooms.

Allow to cool and transfer into bottles. The oil can be strained first, or bottled with the mushrooms, depending on your preferred appearance. Keeping the mushrooms in the oil will develop the flavour over time, but will also contribute to a shorter shelf life.

The oil is wonderful on salads, drizzled over antipasto, served as a dipping sauce with bread and cheese, added to mashed potato, or part of a simple pasta dressing.
