The Essential Ingredient Spices & Spice Mixes

Allspice, ground- carefully ground from ripe, dried pimento berries, this aromatic powder is a key ingredient in many tagines, marinades and Jamaican ‘jerk’ seasoning.

Aniseed, whole- our whole aniseed has a rich licorice-like flavour perfect for Greek, Turkish and Indian cooking.

Cajun Spice Mix- oregano and thyme are combined with cumin, mustard seed, pepper, paprika and salt to create this smoky mix that is ideal combined with olive oil and rubbed into beef, pork, fish, chicken or vegetables prior to barbecuing.

Carraway seeds- our carraway seeds (also known as caraway seeds), grown in Egypt, combine a sharp aniseed-like bitterness with a nutty warmth. Perfect for German rye bread and sauerkraut.

Chermoula Spice Mix- a blend of cumin, paprika, onion, coriander, turmeric, pepper, mint, garlic and salt, this North African spice mix is perfect for barbequing, grilling or roasting meat.

Chillies, crushed- fiery red chilies are slowly dried then carefully crushed, preserving the shape of the perfect white seeds while reducing the bright red flesh to delicate flakes.

Chinese five spice- star anise, cinnamon, Sichuan pepper, cloves and fennel seeds are combined to create this classic mix, an essential inclusion in many Asian marinades, sauces and pastes.

Cinnamon Quills- grown in Sri Lanka, these quills have the richness of aroma that only authentic, quality cinnamon provides. Use when slow-braising meat, creating Asian stocks and poaching fruit.

Coriander Seeds- produced in Australia, these coriander seeds have an earthy flavour that shares little with the fresh herb. Wonderful in pickles, chutneys, marinades and casseroles.

Cumin, ground- excluding black pepper, cumin is the most popular spice in the world. It features heavily in Middle Eastern cuisines, but also appears regularly in European, African, South American and Asian dishes.

Cumin Seeds- using cumin in seed form, dry roasting and grinding immediately prior to use, gives a richer, smokier flavour than is in ground cumin. Grown in India.

Fennel Seeds- these seeds burst with the concentrated, earthy aniseed flavour of fresh fennel, and are used extensively in Indian and Middle Eastern cuisines.

Fenugreek Seeds- sweet and grassy, though also known for its bitter taste, fenugreek seeds are most commonly used in Indian and Sri Lankan curries. Use sparingly.

Garam Masala- a blend of ground spices common to Northern India, garam masala can be used as a flavour base for curries or pilafs on its own, or can be combined with other ingredients to create countess other traditional dishes.

Green Cardamom pods- grown in Guatemala, our green cardamom pods are intensely aromatic and equally at home in savoury and sweet dishes.

Juniper Berries- produced in Germany, with a fresh pine-like profile and subtle citrus notes, these plump berries feature heavily in Northern European and Germanic cuisines, and are the primary flavour in gin.

Madras Curry Powder- this mix of coriander seeds, turmeric, dried chilies, cumin, fennel seeds, pepper, ginger, cinnamon, cloves, star anise, mustard and more is peppery and rich with authentic Indian flavour.

Mustard Seeds, Black- black mustard seeds are often considered a rarity, due to the difficulty involved in their cultivation. Their flavour is stronger and pungency more intense than yellow or white mustard seeds.

Mustard Seeds, Yellow- produced in Australia, these glorious yellow seeds are essential for all savoury pickling and perfectly suited for homemade seeded mustard.

Nigella Seeds- also known as ‘black onion seeds’ or ‘black cumin’, nigella seeds are common in Indian curries and pilafs, and can also be incoporated into many pickling recipes. The Essential Ingredient nigella seeds are grown in Turkey.

Nutmeg, whole- ground nutmeg is a common staple in kitchens, but it simply cannot compete with the flavour of freshly grated nutmeg. Grating nutmeg as you require it generates a more complex flavour and more vibrant aroma.

Panch Phoran (also known as Panch Phoron)- an Eastern Indian spice mix combining fenugreek, Nigella seed, cumin seed, black mustard seed and fennel seed. Traditionally used in a vegetable, meat or fish curry.

Pimento Allspice, whole- as with many spices, using whole dried pimento fruit rather than pre-ground allspice creates superior flavour and aroma. The flavour of these berries, when freshly ground, evokes a combination of cinnamon, cloves and nutmeg, hence the name ‘allspice’.

Saffron- the ‘king of spices’, our saffron is grown in Spain and processed by hand. Rich in colour and flavour.

Tagine Spice Mix- combining smoked paprika, coriander, salt, cassia, cardamon, cloves, garlic, chilli and parsley, this rich spice mix provides authentic and explosive flavour to your slow cooked tagine.

Turmeric- our powdered turmeric root, grown and produced in India, is as rich in colour as it is in flavour. It is a common inclusion in curries, dahl and Southern Asian desserts. Add a small amount to rice before cooking for a stunning golden colour.
