If you’re interested in learning how to make a terrine or want to perfect existing skills, who better to teach you than Kyneton’s king of charcuterie Damian Sandercock. You’ll learn three techniques, a cold-pressed potato and smoked trout terrine and a rustic chicken and ham terrine two ways. Tricks of the trade are shared: how to season, the necessity of salt and fat, and changing ingredients to suit your taste. Is it too corny to say, ‘That’s a wrap’?


This cooking class is a hands-on workshop & involves working in small groups to learn, cook & prepare dishes eaten for lunch under the guidance of the chef/presenter.
